Formula Na2HPO4, CAS 10039-32-4. The dodecahydrate is a white crystal, density 1.52, efflorescent; melts at 35 degC and becomes anhydrous at 100 degC; easily soluble in water giving a slightly alkaline solution. In food industry used to make baking powder and as quality improver, emulsifier, nutritional fortifier, fermentation aid and binder. Packed in 25/50/1000 kg plastic-lined woven bags.
