Formula CaHPO4, MW 136.06. White powder, odourless and tasteless, soluble in dilute hydrochloric acid, nitric acid and acetic acid, slightly soluble in water and insoluble in alcohol, density 2.32, stable in air. In food industry used as leavening agent, dough improver, buffer, nutritional supplement, emulsifier and stabilizer, e.g. leavening agent for flour, cakes, pastries and bakery products, compound bread improver and fried-food modifier; also a nutritional supplement or quality improver in biscuits, milk powder, cold drinks and ice-cream powder.
