Cascade heat utilisation follows the principle of "high grade for high demand, low grade for low demand, use all available heat": high temperature for distillation, medium for bathing and low for space heating. Measured results cut water use at Maotai from 70 t to 30 t and steam at the Mengxi plant from 22.5 t to 14 t, saving 6-8 t of steam per tonne of liquor.
