Hand-made vermicelli produced from sweet potato starch by batter mixing, extrusion, cooling and sun-drying, in 200 g packs. Semi-transparent strands hold up well in long cooking without turning mushy, with a chewy, slippery texture suited to stews, hot pot, hot-and-sour noodles and cold dishes.
