Di-Potassium Phosphate (DKP) is a white crystal with assay ≥98%, P₂O₅ ≥30.5%, K₂O ≥40.5% and water-insoluble matter ≤0.1%; the pH of a 1% solution is 8.5–9.5, it is mildly alkaline and readily soluble in water (about 170 g per 100 ml of water at 25 ℃). It is commonly used as an acidity regulator, antioxidant, sequestrant and stabiliser in food and beverages, suitable for all food, beverage, nutritional supplement and personal care applications. It improves the colloidal solubility of proteins and acts as a buffer against variation in pH.
