In food industry used as leavening agent, dough improver, buffer, nutritional supplement, emulsifier and stabilizer, e.g. leavening agent for flour, cakes, pastries and bakery products, compound bread improver and fried-food modifier; also a nutritional supplement or quality improver in biscuits, milk powder, cold drinks and ice-cream powder.
